Brown Rice Salad Salad:
4 c Brown rice, cooked
1/2 c Swiss cheese, grated
1 cn (6. 5 oz) tuna (optional)
2 tb Fresh chopped parsley
2 ea Tomatoes, cubed
1/2 c Chopped onion
Dressing:
3 tb Olive oil
1 ts Lemon juice
2 tb Mayonnaise
1 ds Cayenne
Combine and toss salad ingredients. Add dressing. Chill at least 1
hour to allow flavors to blend. Serves 6.
