Spanish Rice 2 c Tomato juice
1/2 ts Salt
1 c Long grain rice
2 tb Finely chopped green pepper (ancho pablano, anaheim, or regular bell)
1 tb Finely chopped onion
1 ts To 1 Tbsp chili powder or to taste.
1/2 ts Or more cumin
Oil
Bring tomato juice to a boil with salt, chili powder, and cumin. Add
rice and reduce heat. Cook for 25 minutes. Meanwhile saute the onion
and green pepper in oil until soft.
When rice is cookec, add the pepper and onion and mix thoroughly.
